Woohoo! Day 3 (1/10 of the way through!) is complete and I’ll
call it a huge win.
You see, I’m a creature of habit. When I go to work, I follow my routine and
will eat only what I bring (although we have a cafeteria I can purchase
something from in a pinch, I rarely do).
So, when Snowmageddon 2018 hit Charleston, my office closed down early and I headed home to catch up on some much-past-due chores (and to be amongst a smorgasbord of available food).
Now, normally, after I’d get the house clean(ish), the Hubs and
I would sit down and drink a beer, usually on the back patio. Welp,
since that’s not an option, due to alcohol-free January and the southern blizzard, I decided to buy myself a book I’ve been wanting to
read. Now you know how frugal I am and I
have been trying to get a copy from pals of mine and checking the library. Nada.
So, I pony up the $9.99 and get to reading Skinny Bitch. The language
is vulgar and blunt, but it’s very interesting.
The chapter on the slaughterhouse treatment of animals broke my heart
and convinced me more that plant-based eating is the way to go and was more
impactful than all of the carcinogens found in meat and dairy. The main idea? Read the labels so you know what you’re
putting into your body. Well, I can read
labels all day long, but I’ll never know what most of that crap is and whether
it’s clean or vegan or not.
I will say, Snowmageddon was a crappy time to go on an
alcohol hiatus. Everyone, and I mean
everyone, is posting about their mimosas and hot cocoa with Bailey’s. Sitting by a roaring fire with a glass of
wine sounded absolutely amazing. But I
made a commitment and I always follow through with what I say I’m going to do!
I’ve been vigilant in what I put in my body and have been
exercising, so I was mildly disappointed to hop on the scale this morning and
see I’ve gained a ½ pound. I racked my
brain trying to figure out what is going on.
I haven’t been tracking my water, so I’m going to make sure I get enough
today. If you ask my coworker, he will
tell you, “Erica, drinking beer and eating tacos works for you. Give up this alcohol and meat-free thing and
you’ll lose weight.”
Before I end this entry, I thought I’d throw in a couple of
things people have said to me:
- “You’re going vegan? That means no animal by-products? Well, you do know that animals shit on plants, so even vegetables contain a by-product.” 😐
- "You do know that plants are living things, too, right?” 😮
- (Someone also made a disgusting comment about sexual acts and byproducts from that I’ll let you use your imagination) 😝
So, here is what I consumed over the past few days:
- Breakfast – Orgain Protein Powder and Califia Double Espresso Iced Coffee
- Lunch – ½ cup of brown rice, ¾ cup of Vegan Hoppin John and 1 cup Vegan Collards (leftovers!)
- Dinner - Taco Salad (1 cup romaine, ½ tomato, ½ avocado, ¾ cup of black beans and 2 tablespoons of salsa)
- Snacks – 1 banana and 1 rice roller
- Workout – 3x2 milers @ 7:30 pace with 3:00 minute rest between intervals and 21Day Fix Extreme Upper Fix)
Wednesday (Snow Day – challenging because I was home!)
- Breakfast – Orgain Protein Powder and Califia Double Espresso Iced Coffee (seeing a pattern?)
- Lunch – Taco Salad - (1 cup romaine, ½ tomato, ½ avocado, ¾ cup of black bean and 2 tablespoons of salsa) - leftovers again :-)
- Dinner – Vegan Chili (Gardein Meatless Ground, kidney beans, NSA diced tomatoes, tomato sauce and homemade chili seasoning)
- Snacks – Flatout wrap with 2 tablespoons of black bean and jalapeno hummus and 1 cup of mini pretzels
- Workout – rest day from running; 21 Day Fix Extreme Pilates (one of my absolute favorites!)
Both days, My Fitness Pal has said I’m right below my
calories required, so the weight gain is beyond me, unless I’m shorting myself
water. But, re-reading my list of foods,
maybe I’m OD-ing on carbs? MFP says I'm right below 50% for carb intake, which is its guideline and I'm using my 21 Day Fix Vegan Food list and containers..... Hmmmm
Alright…on to day 4….. and greatness, of course!
